Potato Stir Fry with Broccoli
Notes
Substitute vegetables as needed.
Ingredients
- 1.5 lb of potatoes
- 1 cup broccoli florets
- 1/2 of brussel sprouts (optional)
- 1 pepper
- 1 medium onion
- 1 garlic clove
- 1/2 tsp liquid smoke
- 2 tbsp coconut aminos
- 1 tsp of balsamic glaze
- 1 tbsp of avocado oil (or oil of choice)
- salt to taste
Instructions
- Clean, peel and cut potatoes into cubes.
- Chop onions and peppers.
- Mince the garlic
- Cut broccoli florets into 1/2 inch pieces and quarter the brussel sprouts if using.
- Steam potatoes in a small pot.
- While the potatoes are steaming, place a skillet on medium heat and warm the avocado oil.
- Once the oil is warm, cook peppers and onions for about 5 minutes until they begin to soften.
- Add broccoli and brussel sprouts to the onions and peppers and cook for about 5-7 minutes until they begin to soften as well.
- Once the potatoes are cooked, add them to skillet.
- Season with garlic, salt and pepper
- Add coconut aminos, balsamic glaze and liquid smoke, cook for approximately 3 minutes.
- Serve immediately.
